嫩煎雞排請參考 毛豆抹醬請參考 麵包烤至自己喜歡的脆度,取二片分置二盤中。雞排斜切大片,每件依原來順序排列在一片麵包上。分盛上半量毛豆抹醬,加上歐芹,與所餘的二片麵包一同送席。 Chicken

20 | grams 奶油(butter) |
20 | grams 中筋麵粉 |
240 | ml 雞高湯 |
60 | ml 凜冽白葡萄酒(¼ 杯) |
0.5 | gram 乾龍蒿,
tarragon(¼ 小匙) |
0.5 | gram 乾歐芹,
parsley(¼ 小匙) |
3 | grams 海鹽(½ 小匙) |
0.5 | gram 現磨黑胡椒(¼ 小匙) |
180 | ml 新鮮奶油,
whipping cream(¾ 杯) |
2 | 枚平葉歐芹葉尖 |
奶油、麵粉一同炒至均勻起泡而尚未變色。淋下半量雞高湯,拌炒至均勻濃稠。淋下白葡萄酒,拌炒均勻。拌入所餘的雞高湯,煮沸後續慢煮一分鐘。拌入乾龍蒿、乾歐芹,酌以海鹽、黑胡椒調味。調入新鮮奶油,煮至溫熱。分盛碗中,飾以歐芹葉,送席。 Cream
