糖蒸酥酪是一款極盡精采的甜品,敬請參考瓊漿瑩玉話奶酪。熱食、室溫、冰鎮皆宜,可搭配各式果乾、果仁。這餐因是冬夜,所以熱食,並搭配糖薑。

四年前曾經自製糖薑,這次則使用市售的品項。使用前須切成細粒,為避免相互沾黏,須拌入些許白糖。

調和冷牛奶、白糖,攪拌至白糖溶化。調入酒釀汁,分盛四碗。入 85°C 蒸爐蒸 30 分鐘。取出,撒上糖薑細粒,送席
