現磨白胡椒

番薯排列在襯有烤盤紙的烤盤中,入 200°C 烤箱烤 60 分鐘。取出,帶不燙手時,剝除外皮,約得 300 g。
Note: 這是較小型的番薯。若是較大型者,宜增加烘烤時間。
洋蔥以橄欖油慢炒至透明軟潤而尚未變色,加入蒜片,拌炒至芳香。落入烤番薯,傾入雞高湯,以鍋鏟將番薯切塊,煮沸。酌以海鹽、白胡椒調味,打至均勻濃稠,約得 900 g。
