糖汁水果, Fruit Compotes
前些時候在 Costco 買了冷凍三色莓果,最佳的使用方式,便是製成糖汁莓果。手邊又有頗大量的蘋果、甜桃、手指葡萄,製成四色糖汁水果。

莓果不須解凍,與白糖同置鍋中,煮至白糖溶化。離火,拌入檸檬汁、檸檬皮末。

蘋果去皮去心,每只切 12 瓣。與蘋果汁、白糖同置鍋中,煮至白糖溶化,蘋果軟潤。離火,拌入檸檬汁、檸檬皮末。
糖汁甜桃, Nectarine Compote

手指葡萄每枚切為二段,與白糖同置鍋中,煮至白糖溶化,葡萄微軟。離火,拌入檸檬汁、檸檬皮末。

潤鍋奶油, butter
|
拌和麵粉、發粉、海鹽。雞蛋、牛奶一同打至起泡,拌入奶油,再拌入粉料,靜置 15 分鐘以上。
平底鍋燒至溫熱(190°C),薄刷奶油。淋下 50 g 麵糊,烙至周圍初凝,中心可見細泡升起,約二分鐘。翻面,續烙一分鐘,盛出。全部烙成,共得六片。
